In his new position he is responsible for creating and overseeing all of the menus in each of the hotel’s restaurants including its fine dining, A La Carte, pre-theatre and bar menus.
Michael joined The Fitzwilliam Hotel Belfast as chef de cuisine in 2009 after working under Robbie Miller at Shanks Restaurant in Blackwood Golf Club.
With a love of the great outdoors, Michael’s contemporary cooking is informed by the distinctive flavours of local seasonal produce and inspired by his keen appreciation for nature.
